Our Brazil Salmo is a natural washed coffee that is produced from 12 individual farms in the Cerrado region of Brazil. The natural process involves collecting ripe and raisin cherries, which are then cleaned and separated before heading to the washing stations. Once this process is complete, the cherries are laid out to dry under the sun, a process that can take anywhere from 2-7 days. Once this initial drying phase is complete, they are moved to mechanical dries before resting in wood boxes that promote even drying for 30 days.
The coffee is grown at a lower altitude than other coffee beans, varying from 900-1250m above sea level. The Cerrado region has well-defined seasons with lots of sun all year long. This makes the region enviable for consistency in crop production.
