You place the order, we roast it! Our roasting days are Tuesday and Friday. Your order will be roasted on the next available roasting day once you place your order. We want you to have the freshest coffee available, which is why we make sure to put the roast date on each and every bag.
Fresh roasted coffee typically hits it’s “sweet spot” in 4-6 days, but is perfectly fine to drink 4 hours after roasting. Why 4-6 days? Great question! Fresh roasted coffee off gasses carbon dioxide, which is why your coffee comes in a bag with a one way valve. If it didn’t, the bag would swell up like a balloon. You can tell just how fresh you coffee is by how much it “blooms” when brewing. This is easiest to see when you do a french press or pour over.
Although the coffee will generally not reach it’s full potential for 4-6 days (depends on the coffee, sometimes it’s longer than that!), we enjoy tasting it each day and noting the differences in the flavor profile as it develops. We will let you be the judge!
